Hasty pudding

• 3 cups water
• 1 teaspoon salt
• 1 cup cornmeal
• butter
• molasses or maple

Steps

1. 1

Bring the water and salt to a boil.

2. 2

Whisk in the meal in a slow stream so it does not lump.

3. 3

Lower the heat and cook, stirring, until it is thick, about 15 minutes.

4. 4

   Spoon it into bowls.

5. 5

Put butter and molasses on each bowl at the table.

Leftover pudding, sliced and fried in butter the next morning, is a second dish. Do not throw it out.
