Ingredients

4
  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1 cup boiling water
  • 2 tablespoons milk
  • butter for the griddle

Steps

  1. 1

Stir the salt into the meal. Pour on the boiling water and beat until smooth.

  2. 2

Stir in the milk. The batter should be thick enough to hold a spoon.

  3. 3

Heat a griddle and film it with butter.

  4. 4

Drop the batter by the spoonful and cook until the edges look dry, about 4 minutes. Turn and cook the other side.

  5. 5

Serve with butter and molasses, or with fried apples.

If the cakes stick, the griddle is not hot enough. Wait for the butter to foam and then quiet.
