Ingredients

6
  • 2 cups milk
  • 3/4 cup cornmeal
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 3 eggs, separated

Steps

  1. 1

Heat the oven to 375°F. Butter a baking dish.

  2. 2

Heat the milk to a simmer. Whisk in the meal and salt and cook, stirring, until it thickens.

  3. 3

Take it off the heat. Stir in the butter. Beat in the yolks.

  4. 4

Beat the whites until they hold a soft peak and fold them in.

  5. 5

Pour it into the dish and bake 30 minutes, until puffed and browned. Serve at once.

It falls as it cools. That is not a failure. Bring it to the table in the dish.
